The Elephant Hidden in Plain Sight….

Ever noticed the Elephant Ranch Bar next to the Mesilla Valley Corn Maze on Picacho and wanted to learn more?

Let’s talk about Red Chiles 🌶️ ….

Most red chile sauce is made with dried red chiles but a few years back I was introduced to what they call “Wet Red” chile sauce.

It is made with fresh red chiles right out of the field at harvest time and the taste for me is very different than the dried chiles. It is also almost impossible to find.

We made my own because we couldn’t find it anywhere… at least until now.

Thanks to the Fresh Chile Co. who is based right here in Las Cruces you can get their Fresh Red Chile sauce and it is delicious. Watch the Video

Oh yeah…don’t tell anyone and save some for me! LOL. Let me know if you have tried it and how you like it. We use it on our enchiladas and tamales.
